Method

  1. Place all the base ingredients into a high-speed food processor and press firmly into a lined tin. Make sure you build a crust up the side of the lined tin. Place into the freezer to set whilst you make the filling. (TIP: if you are struggling to spread the base, wet a spoon and use the back of the spoon).
  2. To make the filling, combine all the ingredients in a food processor (except the almond flour) and blend well until the mixture is smooth. Add in the almond flour a little at a time. This will help the mixture thicken. Spread the filling over the base and place back into the freezer to set. This may take a few hours.
  3. To make the chocolate layer, melt the coconut oil and chocolate chips over a Bain-marie on a low-heat, once these ingredients have melted and have completely combined, add in the maple syrup.
  4. Pour your chocolate layer over the top of your caramel layer, and leave to set in the freezer for around 1 hour.
  5. Before slicing, leave out the freezer for around half an hour, so it is easier to slice.
