It’s not long until Christmas now and we’re fully embracing all things festive. Now we know Christmas cake, Christmas pud and mince pies are for everyone which is why we’re bringing to you our #criminallygood Christmas crumble.
Ingredients:
Crumble topping
150g oats
5 packs Vanilla Choc Chip Crookies, crushed
2tbsp coconut oil, melted
80ml maple syrup
30g almonds, chopped
1tsp ground cinnamon
Fruity base
5 medium apples
200g raisins and sultanas
Juice of 2 oranges
1tsp ground cinnamon
1tsp ground ginger
½ tsp ground mixed spice
Pinch of ground nutmeg
Method:
- Preheat your oven to 170 C.
- First start on the fruity filling by chopping up the apples and add them to a saucepan.
- Next to the plan add the raisins, orange juice and spices and bring to a simmer for 10 minutes or until the fruit begins to soften.
- Whilst the fruit is simmering it's time to get on with the crumble.
- To a bowl add all the crumble topping ingredients together until combined.
- Finally start assembling the crumble by first placing a layer of the fruity mixture and topping with the crumble.
- Place the crumble in the preheated oven for around 20 minutes or until golden on top.
- Once baked, serve immediately, we love our with a dollop of coconut yoghurt too, yum!
