Who else is ready for a #CriminallyGood Pancake Day?
400ml oat milk
350g gluten free self raising flour
3tbsp coconut oil, melted
1tsp chia seeds
2tbsp maple syrup, plus extra for serving
Handful of fresh raspberries
1 pack of Vanilla Choc Chip Crookies
Add the flour and chia seeds into a bowl and whisk until combined.
Next add in 2 tbsp of melted coconut oil, maple syrup and the oat milk again whisking until you have a smooth batter.
Once you have your batter it's time to get flipping. Heat a large frying pan adding in an extra tbsp of the coconut oil. Once the oil is hot add a tablespoon of batter mix to the pan and leave to cook for about 2 minutes. You will notice small air bubbles forming, the sign of a perfectly fluffy pancake!
One your pancake looks to be firming up at the sides you should be able to flip it over with ease. Once flipped, allow the pancake to cook a further 1-2 minutes. Repeat the process until you have used all of your batter.
Now you have a healthy stack of pancakes, It's all about the toppings. For #CriminallyGood stack we chose to use an extra glug of maple syrup, handful of raspberries and ok course a crumbling of Crookies!
