French Toast Crookie Style
Ever stuck for brunch ideas? Well we’ve got you covered with Crookie loaded french toast, yum!


3 thick cut slices of sourdough

3 tbsp of maple syrup

2 tbsp ground flaxseeds

120 ml almond milk

1 tsp cinnamon

1 tsp vanilla extract

1 tsp Coconut oil

For the topping:

Coconut yoghurt


Crookies of choice we used Salted Double Choc & Vanilla Choc Chip

Drizzle of maple syrup


  1. In a shallow dish mix together the maple syrup, ground flaxseeds, almond milk, cinnamon as well as the vanilla extract and leave to set for 10 minutes or until the mix has thickened.
  2. Once the mixture has firmed up, soak each piece of toast until completely coated.
  3. Place a medium frying pan over a medium heat adding the coconut oil. Once the pan is hot add the soaked slices of bread removing the excess batter. Fry each piece of bread for 2 minutes on each side or until golden.
  4. Finally it's time to assemble the french toast stack. Onto the warm french toast add a dollop of coconut yoghurt, a handful of fresh raspberries, a Crookie or two we crumbled some and kept a few whole, finally add a drizzle of maple syrup.
  5. Enjoy!
