Ingredients:
The base:
3 tbsp cacao powder
2 tbsp melted coconut oil
50g coconut flour
50g almond flour
Pinch of sea salt
3 tbsp maple syrup
The creamy middle:
450g coconut cream
3 tbsp peanut butter
80g maple syrup
1 tsp vanilla
Pinch of sea salt
The chocolate ganache topping:
1 vegan chocolate bar of choice
1 tbsp coconut oil
1 tbsp peanut butter
Method:
- In a large bowl, mix together all of the base ingredients until a dough forms. Press dough into a lined baking pan. The size of your pan will decide the thickness of your bars. A banana bread tin is perfect for this recipe!
- Add all the "creamy middle" ingredients in a large bowl. Mix together until thick, smooth and thoroughly combined. Spread this mixture of the base. Put in the freezer to firm up.
- Melt the chocolate, coconut oil, and peanut butter together until smooth. Pour this chocolatey ganache over the now firm peanut butter layer.
- Place in the fridge to set. Once firm, cut up into squares and enjoy!
