Raw Oreo Cookies
These vegan raw Oreo cookies are seriously chocolatey on the outside and extra creamy in the middle. Everybody has a childhood favourite don’t they? One of mine were Oreos, which are actually vegan but I thought it would be fun to make my own! Add a glass of your favourite milk to dip them in, I used Alpro almond milk!





  1. To make the cookies, place the oat flour, pitted dates, cacao powder, 2 tablespoons of coconut oil, 2 tablespoons of maple syrup and salt into a food processor and blend until it is as smooth as possible.
  2. On a clean surface (I used some baking parchment) roll out the mixture until its around 1/4″ thick. Grab a circle cookie cutter and cut out your cookies. Transfer these cut of circles to a plate and place in the freezer.
  3. For the filling, drain the cashews and blend with the coconut oil, 2 tablespoons of maple syrup and vanilla extract until smooth.
  4. Remove the cookies from the freezer and spoon on your icing, place another cookie over the top of the filling to create your sandwich. Do this with the rest of your cookies and filling.
  5. Place them back into the freezer for around 1 hour to set fully before enjoying.
